Meal from the garden

I absolutely LOVE going outside, sniping some greens for my dinner each night, when it's crisp and as fresh as it will ever get. No stale and moldy greens from the store! I also like variety of textures so I picked few different types of greens like arugula, soft light green and red lettuce, some crunchy lettuce and some herbs like parsley and dill. That's the base of my meal tonight.
Then chop it all up, mix some tuna salad - sweet onion, celery, dill, parsley, salt, pepper and a touch of mayo. Fried some hash and add it as a side to the salad. Filling and yummy at the same time. At least my hubby enjoyed it.
Now have to figure out what to cook for tomorrow so he can munch on something while I'm away most of the day. What's on your menu??

  1. I don't know which one is your arugula, but none of them look like the skunky one I grew. Most say they are peppery, mine wasn't a bit peppery (just stinky). Other than that, I too just love those fresh picked and gorgeous colored lettuces! Your meal looks delicious.

  2. Looks yummy! My greens seems to be stunted right now. The neighbors tree is shading the back bed more than expected grrr..

    1. My first smaller garden is also shaded half the day, and only gets sun in second half of the afternoon, but my greens seem to like it that way because they growing there much better than the new garden which gets morning and first half of the afternoon sun. Don't know why that is.

  4. Yummy. We're up to our ears in greens. To bad we're a little behind on the herbs this year. Who can complain with so much fresh stuff growing. Isn't this a wonderful time of year!

  5. oh that looks great! my lettuce is very slow. we've been harvesting spinach, broccoli rabe, arugula, and cilantro. i love tuna and make a really good version with soaked walnuts and sunflower seeds instead of fish. have a great weekend!=)
