Hen of the woods or do you call them chick of the woods! Yum! Did you know they freeze well?
This is Hen of the Woods, or Grifola Frondoza. They are freeze well and can be dried also. I love them sauteed in EVOO with garlic and shallots over pasta or sometimes add a bit of cream and make it into risotto.Chicken of the woods is bright orange on top and yellow on the bottom and grows on fallen trees or stumps - also called Sulfur Shelf.
I need to spend some time with you in the woods! Last year we gathered mushrooms for the first time, and we loved it.
I wish you lived close enough to go foraging, it's alway so much more fun to have a group foray.

Congrats!! There has been absolutely no rain for the last several days here, I haven't gotten out foraging. We are expecting all day of rain tomorrow, so I'm crossing my fingers. It looks so beautiful and delicious!
