Roasted Potatoes

We seem to be in the middle of potato harvest peak which normally would have been at the end of July or even August, but because everything was planted earlier it also gets to be harvested sooner. So with that, I decided to do some roasted potatoes and it's actually very colorful dish. I will post actual harvest totals later but here is the preview of the dish.
Olive oil, sea salt and some sprinkled chopped rosemary and roasted at 375 for 30 minutes and you have a tasty meal. For my hubby I also have some chicken and side of beans but for me this is enough. :)
Edit: here's the actual meal for hubby with chicken, carrots and yellow wax beans.

    1. I love them when they're so young and tender and not too starchy.
